White Chocolate Raspberry Cake (White Tiramisu)




White Chocolate Raspberry Tiramisu

This dessert is always a sell out everytime I make it. Raspberry and white chocolate are a time-tested perfect combo for an after dinner treat. Gather all your ingredients together and you'll soon see why. 

Ingredients

115g white chocolate
6 eggyolks
1/2 cup sugar
1 tub mascarpone cheese
1 tsp good quality vanilla extract
2 cups 35% cream
1/2 cup strong brewed coffee, room temp
36 lady fingers
3 containers fresh raspberries

CHOP white chocolate, set aside.

WHISK eggyolks in a heat proof bowl with quarter cup of the sugar over a double boiler. Continue whisking until the mixture thickens, and the whisk leaves a trail of thick ribbon when lifted (French for "au ruban"..fancy right?).

ADD in white chocolate, stir until smooth. Take it out from the heat, and let it cool slightly.

MIX mascarpone cheese and vanilla into egg mixture until no more lumps of cheese are visible.  

TRANSFER the cold 35% cream into a mixing bowl and start whipping. Add the remaining quarter cup of sugar, and whip until it thickens like a billowy clouds. 

FOLD the whipped cream into mascarpone cheese mixture until combined.

DIP each lady finger in the cooled brewed coffee quickly, and arrange into mason jars alternately with the chocolate mixture and raspberries. Top it off with fresh raspberry.
